Meal Planning: 30 Ways To Use Meatballs

Meatballs are a staple item in my once a month cooking freezer stash. You can use your favorite meatball recipe, make and freeze enough for 4-6 meals and use these recipes for a delicious and easy dinner:

1) Meatball Kabobs
2) Meatball Minestrone
3) Mushroom Meatball Soup
4) Meatball Sandwich Casserole
5) Baked Meatball Ziti
6) Mexican Meatball Salsa Soup
7) Italian Meatball Hoagies
8) Cheesy Meatball Veggie Casserole
9) Crock Pot Meatball Stew
10) Ravioli & Meatball Bake
11) Hungarian Meatball Stew
12) Meatball Bake
13) Meatball Sub Panini
14) Tex Mex Meatball Pie
15) Paula Deen’s Layered Meatball Casserole
16) Spaghetti & Meatball Casserole
17) Meatball Beef Stroganoff
18) Meatball Pot Pies
19) Burgandy Meatball Stew
20) Skillet Meatball Goulash
21) Pasta & Meatball Soup
22) Meatball Pizza
23) Meatballs Rice & Gravy

29) Combine 1 can cream of mushroom soup and 1 lg jar brown gravy with family size portion of meatballs. Serve on rice or over noodles.
30) Spaghetti sauce & frozen meatballs into the crockpot 2-4 hours before dinner. Serve over noodles.

Hi - I "eyeball" my meatball recipe, so I don't really have one to give. But I can tell you that it consists of 3 parts ground chuck to one part sausage. Then I add 1-3 eggs depending on the size of the batch, ketchup, a dash (or three)of hot sauce and 1-2 cups Quaker old fashioned oats (probably about 1 cup oats per 3-4 lbs meat). Most people prefer to use bread crumbs, but I don't like my meatballs to taste "fluffy".

I broil them on a broiler pan for just a few minutes, let them cool on paper towels and freeze.

Sorry it's not more scientific than that =)

SO funny... I bought a recipe book called "101 ways to prepare meatballs" and I used it on my family. By the 3rd recipe (not on successive nights) they were all like, "Uh, we dont' like meatballs. Please stop serving them."

Oh great, now you tell me. Now i have 3 more pounds of meatballs to use up! LOL

fortunately I had bookmarked this blog entry for future reference, because as luck would have it, I just got quite a bit of ground beef on sale...
I think I'll be trying at least 7 of the recipes!
